Brief introduction to "Towards Safe Food: Rights, Rules, Values in the Meat Value Chain" edited by Piera Campanella. The introduction presents the contributions published in the volume as outcomes of Ali-Menti, an interdisciplinary research project aimed at investigating the issue of food security, starting from the situation of the meat industry. After a general illustration of the research topic, as well as of the structure of the book, the introduction proceeds to summarize the themes addressed in each contribution.
