New synthesized curcumin-pyrrole derivatives, CurPy1, CurPy2 and CurPy3, were exposed to visible and UV light in solution at 298 K. In both cases remarkable spectral changes were generated according to irreversible E-Z photoisomerization involving one of the two double bonds in the curcuminoid unit. Photochemical degradation may also occurs depending on the irradiation time as confirmed by HPLC measurements. The lipophilic nature of each CurPy was quantified by measuring the experimental Log kw value and the effect of sulfobutylether-β-cyclodextrin (SBE-βCD) in aqueous solution was observed. The host/guest stoichiometry and the binding constant values of the SBE-βCD/CurPy inclusion complexes were spectroscopically determined. Furthermore, the thermodynamic parameters obtained by Isothermal Titration Calorimetry (ITC) highlights that complexation occurs through a spontaneous process.
